Spring time is always a highly-anticipated time of year at Ambiente as it means the release of this year’s Tio Pepe Fino En Rama Vintage! It has finally hit our restaurants and it’s already a firm favourite with our tapas lovers and team alike!

En Rama
En Rama, meaning ‘raw’, is an unfiltered and unclarified Fino sherry produced by Gonzalez Byass in Jerez. Available for just a few short months each year, this limited edition Tio Pepe is the closest you can get to drinking fresh Fino Sherry straight ‘out of the cask’ in Jerez.

In the selection for this year’s vintage, Antonio Flores and the team has moved beyond the original Constancia and Rebollo wineries where the first soleras were laid in the 19th century, and ventured into the 1960s to select butts from the soleras at the Gran Bodega Tio Pepe as well.

En Rama is chosen from a few select sherry casks and this year, they have been bottled from ninety-eight butts from across the three cellars have been used for the 2023 release, each contributing to the character of the final blend.

The weather during the growing year was marked by an almost spring-like winter, which meant the layer of flor was able to remain active and healthy, providing another year of life, evidenced in every one of the butts selected

This year’s 14th En Rama edition has been much anticipated and Antonio Flores, award-winning master blender at González Byass, comments, “The 2023 release of Tio Pepe En Rama is straw yellow with an olive-green background with golden glints. It displays intense, very expressive aromas of the starter yeast, nuts, apple, fresh herbs and chalk. Pure Albariza. On the palate, it is captivating, fresh, intense, smooth and creamy.

Initially approached as an experimental bottling, the success of Tio Pepe Fino En Rama has pioneered a whole new sherry category, in which we are very proud to play a key role.
