Tortillitas de Camarones Recipe

We couldn’t shine a spotlight on Jerez without talking about these addictive little shrimp fritters.

Once you’ve tried them on a hot day with a cold glass of Fino en Rama (our drink special this month), there’s really no going back.

A true staple of Andalusian cuisine, Tortillitas de Camarones originated in the province of Cádiz and are especially associated with the coastal town of San Fernando. Though Jerez has very much embraced them as its own.

Tortillitas de Camarones

They’re made from a light batter of wheat and chickpea flour, mixed with water, herbs and tiny whole shrimp from the Bay of Cádiz, before being fried in extra virgin olive oil until crisp, delicate and lacy.

They’re enjoyed year-round but are especially popular during Carnival season, and perfectly capture the seafood-rich spirit of southern Andalucía. 

Whenever we’re in Jerez, ordering a plate (or two) is non-negotiable.

What makes Tortillitas de Camarones so special is their texture. Crisp and golden at the edges, light and delicate in the middle, with bursts of sweet shrimp and savoury sea-salt flavour throughout. They’re the kind of thing you order “to share” and immediately regret sharing.

They also happen to be one of the perfect matches for Fino en Rama. The cold, saline freshness of the sherry cuts through the fritters beautifully and somehow makes you want another bite… and another sip.

In Jerez, they’re best enjoyed casually... standing at a bar, sat in a sunny plaza or squeezed into a busy tabanco with friends. That’s exactly the feeling we wanted to bring to this month’s special.

Tortillitas de Camarones with Tio Pepe Fino En Rama

Tortillitas de Camarones

Ingredients

  • 200g Baby Shrimp

  • 90g Plain White Flour

  • 64g Gram Flour

  • 236ml Cold Water

  • 75g Spring Onion, finely diced

  • 10g Parsley, chopped

  • Zest of ⅓ Lemon

  • 2g Cracked Black Pepper

  • 6g Maldon Salt

  • 300ml Olive Oil

  • 5g Garlic, finely diced

Method

Combine the all-purpose flour, chickpea flour and a pinch of salt in a large bowl. Stir through the onion, parsley & lemon zest.

Add the water and mix to form a smooth, runny batter. Stir in the shrimp, making sure they are coated in the batter, then chill for 30 minutes for extra crispy fritters.

Pour a little less than an inch of olive oil into a large, shallow frying pan and set over medium-high heat until the oil reaches about 180°C.

Once heated, add tablespoons of the batter to the frying pan. The batter will expand and crisp up. Add enough fritters to fill the pan without them touching each other or the edges of the pan.

Fry until they are golden brown, turning them over halfway through to brown both sides.

Use tongs to remove the fritters from the pan, allowing excess oil to drip back into the pan. Gently put on a plate covered with paper towels and drain.

Season with Maldon salt and serve hot with a few wedges of lemon. Enjoy immediately!

Chef’s Notes

If you can't buy camarones (Spanish baby shrimp), de-shell fresh tiger prawns and dice up.

You can use frozen cooked shrimp, but make sure they are completely thawed and dried before cooking.

If you can't find chickpea flour, you can substitute the same amount of wheat flour.

Just add a half teaspoon of turmeric to give the light yellow tinge to the tortillitas.

Chill the batter for 30 minutes before frying for extra crispy fritters.
